FRENCH PASTRY-MAKING WORKSHOP
(Every Monday morning ~ 9am to 1:30pm)
The sweet life in Provence exists not only because of the sun and nearby sea. There are those magnificent French pastries, too. Each half-day class will have its own focus, on a particular pastry skill: Pâte à choux, macarons, seasonal fruit tarts and creams, and the "classics." During the workshpy we'll demystify the art of the French pâtissier. You'll not only go home with a whole new set of dessert-making skills, but you'll also leave with your own box of freshly-made French pastries.
Description of each thematic workshop:
Pâte à Choux Class ~
We'll make several choux paste pastries, including the éclair, religieuse and chouquette and learn the secrets to making the perfect choux dough so you have a light an airy center (need room for a full filling of pastry cream) and a crisp crust. We'll also make pastry cream and ganache during class and learn to professionally fill your choux creations. You'll sample during class and also leave with a box of your sweet creations.
Seasonal Fruit Tarts and Creams Class ~
This class will focus on fruit tarts of the season. During class we'll make crumbly sablée dough, the perfect texture contrast to the lusciously smooth pastry cream, we'll also make to create our seasonal fruit tarts. You'll sample some during class and leave with a box of individual tarts that you've created.
The French Classic Pastries Class ~
The ever-so-elegant and much easier than you might think mousse, gateau, moelleux and crème brûlée will be our focus for this class. You'll learn how to easily create these elegant classics and be able to whip them up tout suite for your next dinner party when you return home. You'll also leave with a little box of pastries.
Macaron-Making Workshop ~
We're making macarons in this workshop. You'll learn how to manipulate those egg whites and almond powder into perfect little sandwich cookies. We'll make three flavors of macarons and fill them with ganache, a caramel au beurre salé filling and lemon curd. You'll taste some of what you make and take home a box, too.

Schedule: Every Monday morning April through October 9:00am to 1:30pm
Price: 75 euros per person
Includes: Pastry cooking class with tasting, “take-away” box of pastries you made, and booklet of recipes
Class size: Maximum 8 people per class
All classes are conducted in English

I'll send you a booking form and link to my PayPal account, which you can pay by credit card, check or bank transfer. Once the payment is confirmed, I'll send you your class ticket along with meeting point instructions.
